Abstract:In order to solve the problem of the lack of reference material and the development level of Salmonella, atypical Salmonella NIM JZ048 was selected as the target bacteria, and Enterobacter aerogenes CICC 10293 was selected as the interference bacteria to develop atypical Salmonella reference materials in chicken.The results indicated that the quantitative standard value of Salmonella for the reference material is (1.8±0.4)×103CFU/g, the quantitative standard value of total bacterial count is (5.5±0.9)×103CFU/g, the qualitative standard value is Salmonella positive. The reference material has good uniformity and stability, and can be stably stored at -20℃ for six months.In addition, the reference material was used as the test sample for proficiency test of Salmonella qualitative detection participated by twenty-one food inspection agencies. The results of 15 agencies were qualified. Six agencies failed to detect atypical Salmonella, resulting in unqualified results. The atypical Salmonella reference material in chicken can be effectively used for the evaluation of Salmonella detection capability in food inspection agencies.
